Hot Caramel Sauce (So easy)

After a long and hot week at the bakery, tonight ice cream made the most sense. Vanilla is the most popular flavour in Canada, and Kawartha Dairy is truly the most delicious ice cream. Tonight I was craving a sweet caramel sauce to pair with it.

I try and avoid all the bottled and canned sauces and toppings as I never know what is in them and most of them taste 'aged.' And not in a good way.

So I created my own.  I took my time, measured carefully, boiled it to a perfect consistency and then added a pinch of sea salt to balance it. See the recipe below:

1 cup of yellow or brown sugar

1/2 cup of 35% cream

1 tablespoon of salted butter

pinch of sea salt 

Add butter, cream and sugar to a small saucepan on medium heat. Whisk away for about a minute. Then let it get up to a boil, whisking a bit as you go. Medium boil for about 5 mins and then let sit on turned off burner.

Use immediately or let cool and place in a jar in refrigerator for up to a week. 

Back to me:

Pouring by the spoonful hot caramel sauce on the ice cream, it shimmered and glistened and then slid down to form an island. Shaking Eat My Shortbread Shortbread Crumbs on it with chunks of double baked original shortbread, I knew my craving was about to be sated.
